A rich, fudgy no-bake slice packed with crunchy biscuit pieces and walnuts under a dark chocolate top. An afternoon-tea hero — contains walnuts, so not one for nut-free school bags. Needs 30 minutes chilling before slicing.
Ingredients
- 250 gram plain sweet biscuits
- 1/2 cup walnuts, roughly chopped
- 185 gram butter
- 1/2 cup caster sugar
- 1/4 cup cocoa powder
- 1 piece egg, lightly beaten
- 1 teaspoon vanilla extract
- 150 gram dark chocolate, chopped
Instructions
- 1Grease and line a 20cm square cake tin with baking paper.
- 2Break the biscuits into small chunky pieces and combine with the walnuts in a large bowl.
- 3Melt the butter, caster sugar and cocoa in a saucepan over low heat, stirring until smooth. Remove from the heat and cool for 2 minutes.
- 4Quickly whisk the egg and vanilla into the warm chocolate mixture.
- 5Pour the chocolate mixture over the biscuits and walnuts and stir until everything is coated.
- 6Press the mixture firmly into the tin and refrigerate for 30 minutes.
- 7Melt the dark chocolate in the microwave in 30-second bursts, stirring between each, then spread over the slice.
- 8Chill for another hour until set, then cut into 16 squares.
