Spiced Lamb and Couscous Pan With Spinach

Lamb mince browns with warm spices, then couscous steams in the same pan under a lid. Ten minutes of standing time and dinner makes itself.
Ingredients
- 500 gram lamb mince
- 1 1/2 cup couscous
- 375 millilitre chicken stock
- 1 piece brown onion
- 2 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 120 gram baby spinach
- 250 gram cherry tomatoes
- 1/2 cup greek yoghurt
- 1 tablespoon olive oil
Instructions
- 1Heat the oil in a large frying pan over high heat and brown the lamb mince with the diced onion for 7 minutes.
- 2Stir in the cumin and cinnamon and cook for 1 minute, until the pan smells fragrant.
- 3Add the halved tomatoes and cook for 3 minutes, until they slump.
- 4Scatter the dry couscous evenly over the mince and pour in the hot stock.
- 5Cover, turn the heat off and leave for 10 minutes, until all the liquid has been absorbed.
- 6Fluff with a fork, stir the spinach through until wilted and top with yoghurt.
