Spiced Lamb and Couscous Pan With Spinach

Lamb mince browns with warm spices, then couscous steams in the same pan under a lid. Ten minutes of standing time and dinner makes itself.

Ingredients

  • 500 gram lamb mince
  • 1 1/2 cup couscous
  • 375 millilitre chicken stock
  • 1 piece brown onion
  • 2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 120 gram baby spinach
  • 250 gram cherry tomatoes
  • 1/2 cup greek yoghurt
  • 1 tablespoon olive oil

Instructions

  1. 1Heat the oil in a large frying pan over high heat and brown the lamb mince with the diced onion for 7 minutes.
  2. 2Stir in the cumin and cinnamon and cook for 1 minute, until the pan smells fragrant.
  3. 3Add the halved tomatoes and cook for 3 minutes, until they slump.
  4. 4Scatter the dry couscous evenly over the mince and pour in the hot stock.
  5. 5Cover, turn the heat off and leave for 10 minutes, until all the liquid has been absorbed.
  6. 6Fluff with a fork, stir the spinach through until wilted and top with yoghurt.
