Cheesy Chicken and Broccoli Pasta Bake

Shredded chicken, tender broccoli and pasta in a creamy cheese sauce, baked until golden. A great way to use leftover roast chicken.
Ingredients
- 400 gram penne
- 1 piece broccoli, cut into small florets
- 3 cup cooked chicken, shredded
- 60 gram butter
- 1/3 cup plain flour
- 750 millilitre milk
- 2 cup tasty cheese, grated
- 1 teaspoon garlic powder
- 3 piece spring onion, sliced
Instructions
- 1Preheat the oven to 180°C. Cook the penne in boiling salted water for 8 minutes, adding the broccoli for the last 2 minutes. Drain both together.
- 2Melt the butter in the empty saucepan over medium heat. Stir in the flour and garlic powder and cook for 1 minute.
- 3Whisk in the milk gradually until the sauce is smooth. Simmer for 3 minutes until it coats the back of a spoon.
- 4Off the heat, stir in 1 1/2 cups of cheese until melted. Season with salt and pepper.
- 5Fold in the pasta, broccoli, shredded chicken and spring onion.
- 6Tip everything into a 20 x 30 cm baking dish and top with the remaining cheese.
- 7Bake for 25 minutes until the top is golden and the sauce bubbles at the edges. Rest for 5 minutes before serving.
