Red Lentil Dahl with Spinach

A soothing, golden lentil dahl simmered with turmeric and finished with wilted spinach. Cheap, filling and freezer-friendly.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 piece brown onion, diced
  • 3 clove garlic, crushed
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground turmeric
  • 2 teaspoon ground cumin
  • 1.5 cup dried red lentils, rinsed
  • 1 litre vegetable stock
  • 200 millilitre coconut milk
  • 100 gram baby spinach
  • 3 cup steamed rice, to serve

Instructions

  1. 1Heat the oil in a large pot over medium heat and cook the onion for 5 minutes until soft.
  2. 2Add the garlic, ginger, turmeric and cumin and stir for 1 minute.
  3. 3Add the lentils and stock and bring to the boil.
  4. 4Reduce the heat and simmer uncovered for 20 minutes, stirring occasionally, until the lentils are soft and the dahl is thick.
  5. 5Stir in the coconut milk and spinach and cook for 2 minutes until the spinach wilts.
  6. 6Season with salt and serve over steamed rice.
