Veggie Egg Fried Rice

Classic fried rice loaded with egg, corn, peas and spring onion. A ten-minute dinner that turns leftover rice into something everyone cheers for.
Ingredients
- 4 cup cooked and cooled rice
- 4 piece eggs
- 1 1/2 cup frozen peas and corn
- 4 piece spring onion
- 2 clove garlic
- 3 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 tablespoon vegetable oil
Instructions
- 1Whisk the eggs in a bowl. Slice the spring onions and crush the garlic.
- 2Heat 1 tablespoon of vegetable oil in a wok over high heat. Pour in the eggs and scramble for 1 minute until just set. Tip onto a plate.
- 3Add the remaining oil to the wok. Stir-fry the garlic and the white parts of the spring onion for 30 seconds.
- 4Add the rice and frozen peas and corn. Stir-fry for 4 minutes, breaking up any clumps of rice.
- 5Return the egg to the wok. Add the soy sauce and sesame oil and toss for 2 minutes.
- 6Scatter with the green spring onion tops and serve.
