No-Bake Chocolate Biscuit Log

Plain chocolate biscuits sandwiched with whipped cream into a log that softens overnight into sliceable cake. A beloved retro trick. Needs 6 hours chilling before slicing.
Ingredients
- 600 millilitre thickened cream
- 2 tablespoon icing sugar
- 1 teaspoon vanilla extract
- 250 gram plain chocolate biscuits
- 60 millilitre milk
- 30 gram dark chocolate, grated
Instructions
- 1Whip the cream, icing sugar and vanilla with electric beaters until firm peaks form.
- 2Dip one biscuit briefly in the milk, spread with a teaspoon of cream, then sandwich with another dipped biscuit.
- 3Keep dipping and sandwiching to build one long log of biscuits on a serving plate, lying the log on its side.
- 4Cover the entire log thickly with the remaining cream.
- 5Refrigerate for at least 6 hours, ideally overnight, so the biscuits soften into cake.
- 6Scatter with grated chocolate and slice on a sharp diagonal to show the stripes.
