Sweet Potato and Egg Brekkie Hash

Cubes of sweet potato and capsicum crisp up in the basket, then eggs finish on top in little foil cups. A warm, filling start to the day with almost no washing up.

Ingredients

  • 400 gram sweet potato
  • 1 piece red capsicum
  • 1/2 piece red onion
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 2 piece eggs
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. 1Peel the sweet potato and chop it into 2 cm cubes.
  2. 2Chop the capsicum and onion into similar sized pieces.
  3. 3Toss the vegetables with the olive oil, smoked paprika, salt and pepper in a bowl.
  4. 4Tip the vegetables into the air fryer basket in one loose layer and cook at 190°C for 12 minutes. A 5-6L basket holds this amount comfortably.
  5. 5Pull out the basket and shake it well, then push the hash to the sides to make two gaps.
  6. 6Crack an egg into each gap and cook at 180°C for 6 minutes for a soft yolk, or 8 minutes for firm.
  7. 7Scoop onto two plates and season with extra pepper.
