Sweet Potato and Egg Brekkie Hash

Cubes of sweet potato and capsicum crisp up in the basket, then eggs finish on top in little foil cups. A warm, filling start to the day with almost no washing up.
Ingredients
- 400 gram sweet potato
- 1 piece red capsicum
- 1/2 piece red onion
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 2 piece eggs
- 1 pinch salt
- 1 pinch black pepper
Instructions
- 1Peel the sweet potato and chop it into 2 cm cubes.
- 2Chop the capsicum and onion into similar sized pieces.
- 3Toss the vegetables with the olive oil, smoked paprika, salt and pepper in a bowl.
- 4Tip the vegetables into the air fryer basket in one loose layer and cook at 190°C for 12 minutes. A 5-6L basket holds this amount comfortably.
- 5Pull out the basket and shake it well, then push the hash to the sides to make two gaps.
- 6Crack an egg into each gap and cook at 180°C for 6 minutes for a soft yolk, or 8 minutes for firm.
- 7Scoop onto two plates and season with extra pepper.
