Hearty Sausage and Bean Casserole

Thick pork sausages simmered with beans and vegetables in a rich tomato sauce. Cheap, filling and even better the next day.
Ingredients
- 8 piece thick pork sausages
- 1 tablespoon olive oil
- 1 piece brown onion, diced
- 2 piece carrot, diced
- 2 piece celery, diced
- 2 clove garlic
- 2 teaspoon smoked paprika
- 2 tin diced tomatoes
- 2 tin cannellini beans, drained
- 250 millilitre beef stock
- 1 piece crusty bread
Instructions
- 1Heat the oil in a large heavy pot over medium heat. Brown the sausages for 6 minutes, turning them, then move to a plate.
- 2Add the onion, carrot and celery to the pot. Cook for 6 minutes, stirring, until softened.
- 3Stir in the garlic and paprika and cook for 1 minute.
- 4Add the tomatoes, beans and stock. Stir and bring to a simmer.
- 5Cut each sausage into three chunks and return them to the pot.
- 6Simmer uncovered on low for 35 minutes, stirring every 10 minutes, until the sauce is thick.
- 7Season with salt and pepper. Serve in bowls with thick slices of crusty bread.
