Greek Pasta Salad Jars

A layered pasta salad with olives, feta and crisp veggies that stays fresh in the fridge for days. Shake the jar and lunch is served.
Ingredients
- 250 gram spiral pasta
- 250 gram cherry tomatoes, halved
- 1 piece cucumber, diced
- 1 piece red capsicum, diced
- 1/2 cup pitted kalamata olives
- 100 gram feta, crumbled
- 3 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
Instructions
- 1Cook the pasta in salted boiling water until just tender, about 10 minutes. Drain and rinse under cold water.
- 2Whisk the olive oil, vinegar and oregano in a small jug.
- 3Divide the dressing between 4 large jars, pouring it into the bottom of each.
- 4Layer in the tomatoes, cucumber, capsicum and olives on top of the dressing.
- 5Top with the cooled pasta and finish with crumbled feta. Seal the jars.
- 6Keep in the fridge for up to 3 days. Shake the jar well before eating.
