Buttery Scone Mix Jar

A jar of scone mix that only needs cream and lemonade to become a tray of tall, tender scones. Perfect for surprise visitors or a rainy afternoon.

Ingredients

  • 600 gram self-raising flour
  • 50 gram caster sugar
  • 2 teaspoon baking powder
  • 40 gram full cream milk powder
  • 1 teaspoon salt

Instructions

  1. 1Sift the self-raising flour and baking powder into a large bowl.
  2. 2Whisk through the caster sugar, milk powder and salt.
  3. 3Pour the mix into a 1.5 litre jar and seal it tightly.
  4. 4Label the jar with the date and the to-use amounts below.
  5. 5TO USE: stir 350 g of mix with 150 ml thickened cream and 150 ml lemonade until just combined. Pat out to 3 cm thick, cut 12 rounds and bake at 220°C for 12 minutes.
  6. 6Store in an airtight jar in a cool dark cupboard for up to 3 months.
