Peanut Satay Dressing

Peanut butter loosened with lime, soy and ginger into a rich, savoury dressing. Pours over slaw, noodles and cold chicken — and children love it.
Ingredients
- 120 gram smooth peanut butter
- 2 tablespoon soy sauce
- 2 piece lime
- 1 tablespoon honey
- 2 teaspoon ginger
- 1 clove garlic
- 1/4 teaspoon chilli flakes
- 100 millilitre warm water
Instructions
- 1Spoon the peanut butter into a bowl and finely grate in the ginger and garlic.
- 2Add the soy sauce, honey, chilli flakes and the juice of both limes.
- 3Whisk hard — the mixture will seize and go stiff, which is exactly what should happen.
- 4Add the warm water a tablespoon at a time, whisking after each addition, until it turns smooth and glossy and pours slowly.
- 5Taste and balance — more lime if it is heavy, more honey if it is sharp.
- 6Keeps in the fridge for 1 week. It thickens when cold, so whisk in a splash of hot water to bring it back.
