Green Goddess Dressing

A whole bunch of soft herbs blitzed into yoghurt until it turns vivid green. Pours over leaves, roast vegetables, or a bowl of cold chicken.
Ingredients
- 150 gram greek yoghurt
- 60 gram whole-egg mayonnaise
- 1 cup basil
- 1/2 cup flat-leaf parsley
- 3 tablespoon chives
- 1 tablespoon tarragon
- 2 teaspoon capers
- 1 clove garlic
- 1 piece lemon
- 2 tablespoon olive oil
- 1/2 teaspoon salt
Instructions
- 1Pick the basil, parsley and tarragon leaves off their stalks — the stalks make the dressing bitter.
- 2Put the herbs, chives, capers, garlic, olive oil and 2 tablespoons of lemon juice in a blender.
- 3Blitz for 30 seconds until the herbs are completely broken down and the mixture is bright green.
- 4Add the yoghurt, mayonnaise and salt, then pulse just until combined — over-blending makes it thin.
- 5Taste and add more lemon juice until it tastes fresh rather than creamy.
- 6Use within 3 days — the colour fades after that, though it still tastes good.
