Green Goddess Dressing

A whole bunch of soft herbs blitzed into yoghurt until it turns vivid green. Pours over leaves, roast vegetables, or a bowl of cold chicken.

Ingredients

  • 150 gram greek yoghurt
  • 60 gram whole-egg mayonnaise
  • 1 cup basil
  • 1/2 cup flat-leaf parsley
  • 3 tablespoon chives
  • 1 tablespoon tarragon
  • 2 teaspoon capers
  • 1 clove garlic
  • 1 piece lemon
  • 2 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions

  1. 1Pick the basil, parsley and tarragon leaves off their stalks — the stalks make the dressing bitter.
  2. 2Put the herbs, chives, capers, garlic, olive oil and 2 tablespoons of lemon juice in a blender.
  3. 3Blitz for 30 seconds until the herbs are completely broken down and the mixture is bright green.
  4. 4Add the yoghurt, mayonnaise and salt, then pulse just until combined — over-blending makes it thin.
  5. 5Taste and add more lemon juice until it tastes fresh rather than creamy.
  6. 6Use within 3 days — the colour fades after that, though it still tastes good.
