Big-Batch Pancake Mix Jar

A make-ahead jar of dry pancake mix so weekend breakfast is only an egg and a splash of water away. Scoop, whisk and cook whenever the craving hits.
Ingredients
- 600 gram plain flour
- 60 gram caster sugar
- 3 tablespoon baking powder
- 1 teaspoon bicarbonate of soda
- 1 teaspoon salt
- 60 gram full cream milk powder
Instructions
- 1Whisk the plain flour, caster sugar, baking powder, bicarbonate of soda and salt together in a large bowl.
- 2Whisk the milk powder through until no pale streaks remain.
- 3Spoon the mix into a 1.5 litre airtight jar and tap the base to settle it.
- 4Label the jar with the date and the to-use amounts below.
- 5TO USE: whisk 200 g of mix (about 1 1/2 cups) with 1 egg, 250 ml water and 1 tablespoon melted butter until just combined. Cook 1/4 cup measures in a buttered frying pan over medium heat for 2 minutes per side. Makes 8 pancakes.
- 6Store in an airtight jar in a cool dark cupboard for up to 3 months.
