Easy Vegie Fried Rice

Day-old rice tossed in a hot pan with egg, peas, corn and spring onion. A speedy side that also rescues leftovers.
Ingredients
- 4 cup cooked jasmine rice
- 2 piece eggs
- 1 cup frozen peas and corn
- 3 piece spring onions
- 2 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 tablespoon vegetable oil
Instructions
- 1Heat 1 tablespoon of vegetable oil in a wok over high heat.
- 2Pour in the beaten eggs, scramble for 1 minute, then tip onto a plate.
- 3Add the remaining oil and stir-fry the peas and corn for 2 minutes.
- 4Add the rice and stir-fry for 3 minutes, breaking up any clumps.
- 5Return the egg to the wok with the soy sauce and sesame oil and toss for 1 minute.
- 6Stir through the sliced spring onions and serve.
