Easy Vegie Fried Rice

Day-old rice tossed in a hot pan with egg, peas, corn and spring onion. A speedy side that also rescues leftovers.

Ingredients

  • 4 cup cooked jasmine rice
  • 2 piece eggs
  • 1 cup frozen peas and corn
  • 3 piece spring onions
  • 2 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoon vegetable oil

Instructions

  1. 1Heat 1 tablespoon of vegetable oil in a wok over high heat.
  2. 2Pour in the beaten eggs, scramble for 1 minute, then tip onto a plate.
  3. 3Add the remaining oil and stir-fry the peas and corn for 2 minutes.
  4. 4Add the rice and stir-fry for 3 minutes, breaking up any clumps.
  5. 5Return the egg to the wok with the soy sauce and sesame oil and toss for 1 minute.
  6. 6Stir through the sliced spring onions and serve.
