Peanut Satay Noodle Stir-Fry

Chewy noodles and crunchy vegetables coated in a creamy peanut satay sauce. Fast, saucy and very moreish.
Ingredients
- 375 gram dried rice noodles
- 1/2 cup smooth peanut butter
- 3 tablespoon soy sauce
- 1 piece lime, juiced
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 1 piece red capsicum, sliced
- 2 piece carrot, cut into matchsticks
- 150 gram sugar snap peas
- 2 clove garlic, crushed
- 1/4 cup roasted peanuts, chopped
Instructions
- 1Soak or cook the rice noodles according to the packet directions, then drain.
- 2Whisk the peanut butter, soy sauce, lime juice, sugar and 1/2 cup of hot water in a bowl until smooth.
- 3Heat the oil in a wok over high heat.
- 4Stir-fry the capsicum, carrot, snap peas and garlic for 3 minutes until just tender.
- 5Add the noodles and satay sauce and toss for 2 minutes until everything is coated and hot.
- 6Serve topped with chopped peanuts.
