Beef Kofta Tray With Potatoes and Yoghurt

Hand-rolled beef koftas roast over cumin potatoes until charred at the tips. A garlicky yoghurt drizzle at the end pulls the whole tray together.

Ingredients

  • 600 gram beef mince
  • 800 gram baby potatoes
  • 1 piece red onion
  • 2 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • 3 tablespoon olive oil
  • 3/4 cup greek yoghurt
  • 1 clove garlic
  • 250 gram cherry tomatoes
  • 1/2 bunch flat-leaf parsley

Instructions

  1. 1Heat the oven to 210°C and halve the baby potatoes.
  2. 2Toss the potatoes on a large oven tray with 2 tablespoons of oil, 1 teaspoon cumin and a pinch of salt.
  3. 3Roast the potatoes alone for 20 minutes, until the cut faces are golden.
  4. 4Mix the beef mince with the remaining cumin, the paprika and a good pinch of salt, then shape into 12 short sausage shapes.
  5. 5Add the koftas, onion wedges and tomatoes to the tray and drizzle with the last of the oil.
  6. 6Roast for 20 minutes, until the koftas are dark brown on top and firm.
  7. 7Stir the crushed garlic into the yoghurt and spoon it over the tray with the parsley.
