Butterscotch Self-Saucing Pudding

Golden sponge on top, rich butterscotch sauce underneath. It looks like magic but takes one bowl and one dish.

Ingredients

  • 1 cup self-raising flour
  • 1/2 cup brown sugar
  • 125 millilitre milk
  • 60 gram butter, melted
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 3/4 cup extra brown sugar
  • 2 tablespoon golden syrup
  • 375 millilitre boiling water

Instructions

  1. 1Preheat the oven to 180°C and grease a 6-cup (1.5 litre) baking dish.
  2. 2Stir the flour and brown sugar together in a large bowl.
  3. 3Whisk the milk, melted butter, egg and vanilla in a jug, then stir into the dry ingredients until just combined.
  4. 4Spread the batter into the dish and sprinkle the extra brown sugar evenly over the top.
  5. 5Stir the golden syrup into the boiling water, then pour it gently over the back of a spoon to cover the pudding. Do not stir.
  6. 6Bake for 35 minutes, until the top springs back when lightly pressed.
  7. 7Rest for 5 minutes, then serve warm with vanilla ice cream.
