Butterscotch Self-Saucing Pudding

Golden sponge on top, rich butterscotch sauce underneath. It looks like magic but takes one bowl and one dish.
Ingredients
- 1 cup self-raising flour
- 1/2 cup brown sugar
- 125 millilitre milk
- 60 gram butter, melted
- 1 piece egg
- 1 teaspoon vanilla extract
- 3/4 cup extra brown sugar
- 2 tablespoon golden syrup
- 375 millilitre boiling water
Instructions
- 1Preheat the oven to 180°C and grease a 6-cup (1.5 litre) baking dish.
- 2Stir the flour and brown sugar together in a large bowl.
- 3Whisk the milk, melted butter, egg and vanilla in a jug, then stir into the dry ingredients until just combined.
- 4Spread the batter into the dish and sprinkle the extra brown sugar evenly over the top.
- 5Stir the golden syrup into the boiling water, then pour it gently over the back of a spoon to cover the pudding. Do not stir.
- 6Bake for 35 minutes, until the top springs back when lightly pressed.
- 7Rest for 5 minutes, then serve warm with vanilla ice cream.
