Greek Lemon and Oregano Dressing

Good olive oil, lemon and a heavy hand with dried oregano. The dressing for tomato, cucumber and feta salads — and for lamb.
Ingredients
- 160 millilitre olive oil
- 2 piece lemon
- 1 tablespoon red wine vinegar
- 2 teaspoon dried oregano
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
Instructions
- 1Crumble the dried oregano between your palms into a screw-top jar — it wakes the flavour up.
- 2Juice both lemons into the jar and add the vinegar, salt and pepper.
- 3Crush the garlic clove with the flat of a knife and drop it in whole so you can lift it out later.
- 4Pour in the olive oil, screw on the lid and shake hard for 30 seconds.
- 5Leave to stand for 15 minutes, then remove the garlic and shake again before pouring.
- 6Keeps in the fridge for 1 week. Use your best olive oil here — there is nowhere for a poor one to hide.
