Greek Lemon and Oregano Dressing

Good olive oil, lemon and a heavy hand with dried oregano. The dressing for tomato, cucumber and feta salads — and for lamb.

Ingredients

  • 160 millilitre olive oil
  • 2 piece lemon
  • 1 tablespoon red wine vinegar
  • 2 teaspoon dried oregano
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper

Instructions

  1. 1Crumble the dried oregano between your palms into a screw-top jar — it wakes the flavour up.
  2. 2Juice both lemons into the jar and add the vinegar, salt and pepper.
  3. 3Crush the garlic clove with the flat of a knife and drop it in whole so you can lift it out later.
  4. 4Pour in the olive oil, screw on the lid and shake hard for 30 seconds.
  5. 5Leave to stand for 15 minutes, then remove the garlic and shake again before pouring.
  6. 6Keeps in the fridge for 1 week. Use your best olive oil here — there is nowhere for a poor one to hide.
