Creamy Avocado and Lime Dressing

A whole avocado blitzed with lime and coriander into a pourable dressing that is creamy without a drop of dairy. Brilliant on taco salads and grain bowls.
Ingredients
- 1 piece avocado
- 2 piece lime
- 1/2 cup coriander
- 1 clove garlic
- 2 tablespoon olive oil
- 80 millilitre water
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
Instructions
- 1Scoop the avocado flesh into a blender, leaving behind any brown patches.
- 2Add the coriander including its tender stalks, the garlic, cumin, salt, olive oil and the juice of both limes.
- 3Blend for 30 seconds, scraping down the sides once.
- 4With the motor running, pour in the water a splash at a time until it pours like thick cream.
- 5Taste and add more lime juice and salt — avocado swallows seasoning, so it will need more than you expect.
- 6Best on the day it is made. Press cling film onto the surface in the jar to slow browning and keep for up to 2 days.
