Creamy Avocado and Lime Dressing

A whole avocado blitzed with lime and coriander into a pourable dressing that is creamy without a drop of dairy. Brilliant on taco salads and grain bowls.

Ingredients

  • 1 piece avocado
  • 2 piece lime
  • 1/2 cup coriander
  • 1 clove garlic
  • 2 tablespoon olive oil
  • 80 millilitre water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin

Instructions

  1. 1Scoop the avocado flesh into a blender, leaving behind any brown patches.
  2. 2Add the coriander including its tender stalks, the garlic, cumin, salt, olive oil and the juice of both limes.
  3. 3Blend for 30 seconds, scraping down the sides once.
  4. 4With the motor running, pour in the water a splash at a time until it pours like thick cream.
  5. 5Taste and add more lime juice and salt — avocado swallows seasoning, so it will need more than you expect.
  6. 6Best on the day it is made. Press cling film onto the surface in the jar to slow browning and keep for up to 2 days.
