Apricot Coconut Bliss Balls

Chewy, naturally sweet bliss balls made from dried apricots, oats and coconut. Nut-free, so they are safe for school lunchboxes. Needs 30 minutes chilling to firm up.
Ingredients
- 200 gram dried apricots
- 1 cup rolled oats
- 3/4 cup desiccated coconut
- 2 tablespoon honey
- 1 tablespoon coconut oil, melted
- 1/4 cup extra desiccated coconut, for rolling
Instructions
- 1Put the apricots, oats, coconut, honey and coconut oil in a food processor.
- 2Blitz for 1 to 2 minutes, until the mixture is sticky and holds together when pinched.
- 3Roll tablespoons of the mixture into balls with damp hands.
- 4Roll each ball in the extra coconut to coat.
- 5Chill in the fridge for 30 minutes to firm up. Store in an airtight container for up to a week.
