Apricot Coconut Bliss Balls

Chewy, naturally sweet bliss balls made from dried apricots, oats and coconut. Nut-free, so they are safe for school lunchboxes. Needs 30 minutes chilling to firm up.

Ingredients

  • 200 gram dried apricots
  • 1 cup rolled oats
  • 3/4 cup desiccated coconut
  • 2 tablespoon honey
  • 1 tablespoon coconut oil, melted
  • 1/4 cup extra desiccated coconut, for rolling

Instructions

  1. 1Put the apricots, oats, coconut, honey and coconut oil in a food processor.
  2. 2Blitz for 1 to 2 minutes, until the mixture is sticky and holds together when pinched.
  3. 3Roll tablespoons of the mixture into balls with damp hands.
  4. 4Roll each ball in the extra coconut to coat.
  5. 5Chill in the fridge for 30 minutes to firm up. Store in an airtight container for up to a week.
