Honey Soy Chicken Stir-Fry

Sticky-sweet chicken with crunchy capsicum and broccoli, all cooked in one wok. Great with rice for a fast family favourite.
Ingredients
- 500 gram chicken breast fillets
- 1 piece broccoli
- 1 piece red capsicum
- 3 piece spring onion
- 2 clove garlic
- 60 millilitre soy sauce
- 2 tablespoon honey
- 2 teaspoon cornflour
- 2 tablespoon vegetable oil
- 2 cup steamed rice, to serve
Instructions
- 1Slice the chicken into thin strips. Cut the broccoli into small florets and slice the capsicum and spring onions.
- 2In a small bowl, stir together the soy sauce, honey, cornflour, crushed garlic and 60 millilitres of water.
- 3Heat 1 tablespoon of oil in a wok over high heat. Add half the chicken and stir-fry for 3 minutes until golden. Tip onto a plate.
- 4Repeat with the remaining oil and chicken, then set all the chicken aside.
- 5Add the broccoli and capsicum to the wok with 2 tablespoons of water. Stir-fry for 2 minutes.
- 6Return the chicken to the wok and pour in the sauce. Stir for 1 minute until the sauce is thick and coats everything.
- 7Scatter with spring onion and serve over steamed rice.
