Slow Cooker Smoky Pulled Pork

Tender shredded pork in a smoky homemade barbecue sauce. One shoulder feeds a crowd across rolls, tacos and baked potatoes all week.
Ingredients
- 1.5 kilogram boneless pork shoulder
- 2 tablespoon smoked paprika
- 2 tablespoon brown sugar
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 cup tomato sauce
- 1/4 cup apple cider vinegar
- 1 tablespoon worcestershire sauce
- 125 millilitre chicken stock
Instructions
- 1Mix the paprika, brown sugar, cumin, garlic powder and salt in a small bowl.
- 2Rub the spice mix all over the pork shoulder.
- 3Place the pork in the slow cooker and pour over the tomato sauce, vinegar, worcestershire sauce and stock.
- 4Put the lid on and cook on LOW for 8 hours until the pork pulls apart easily with a fork.
- 5Lift the pork onto a board and shred it with two forks.
- 6Return the shredded pork to the sauce in the slow cooker and stir to coat.
- 7Serve in soft rolls with slaw. Freeze cooled pork in its sauce for up to 3 months; thaw overnight and reheat in a saucepan until steaming.
