Slow Cooker Smoky Pulled Pork

Tender shredded pork in a smoky homemade barbecue sauce. One shoulder feeds a crowd across rolls, tacos and baked potatoes all week.

Ingredients

  • 1.5 kilogram boneless pork shoulder
  • 2 tablespoon smoked paprika
  • 2 tablespoon brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 cup tomato sauce
  • 1/4 cup apple cider vinegar
  • 1 tablespoon worcestershire sauce
  • 125 millilitre chicken stock

Instructions

  1. 1Mix the paprika, brown sugar, cumin, garlic powder and salt in a small bowl.
  2. 2Rub the spice mix all over the pork shoulder.
  3. 3Place the pork in the slow cooker and pour over the tomato sauce, vinegar, worcestershire sauce and stock.
  4. 4Put the lid on and cook on LOW for 8 hours until the pork pulls apart easily with a fork.
  5. 5Lift the pork onto a board and shred it with two forks.
  6. 6Return the shredded pork to the sauce in the slow cooker and stir to coat.
  7. 7Serve in soft rolls with slaw. Freeze cooled pork in its sauce for up to 3 months; thaw overnight and reheat in a saucepan until steaming.
