Cheesy Spinach Quesadillas

Crispy golden tortillas with a gooey cheese and spinach filling, cut into wedges for little hands. Ready in about ten minutes flat.
Ingredients
- 4 piece wholemeal tortillas
- 1 1/2 cup grated tasty cheese
- 2 cup baby spinach, roughly chopped
- 1/2 cup corn kernels, drained
- 1 teaspoon olive oil
Instructions
- 1Scatter cheese, spinach and corn over half of each tortilla.
- 2Fold each tortilla over to make a half-moon and press down gently.
- 3Heat a little oil in a frying pan over medium heat.
- 4Cook each quesadilla for 2 minutes per side, until golden and the cheese has melted.
- 5Rest for 1 minute, then cut into wedges and serve.
