Curried Egg Sandwich Fingers

Creamy curried egg on soft bread, cut into neat little fingers. An old-school favourite that works for lunchboxes and picnics.

Ingredients

  • 6 piece eggs
  • 8 slice wholemeal bread
  • 3 tablespoon mayonnaise
  • 1 teaspoon mild curry powder
  • 1 tablespoon chives, snipped
  • 20 gram butter, softened
  • 1 pinch salt and pepper

Instructions

  1. 1Boil the eggs for 9 minutes, then cool in cold water and peel.
  2. 2Mash the eggs in a bowl with a fork.
  3. 3Stir in the mayonnaise, curry powder, chives, salt and pepper.
  4. 4Butter the bread and spread the egg mixture over 4 slices.
  5. 5Top with the remaining bread, trim the crusts if you like, and cut each sandwich into 3 fingers.
