Honey Mustard Dressing

Sweet, sharp and glossy, with two mustards for depth. The dressing that gets kids eating salad — and it doubles as a chicken marinade.

Ingredients

  • 2 tablespoon dijon mustard
  • 1 tablespoon wholegrain mustard
  • 2 tablespoon honey
  • 2 tablespoon apple cider vinegar
  • 125 millilitre olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon cracked black pepper

Instructions

  1. 1Put both mustards, the honey and the vinegar in a screw-top jar.
  2. 2Screw the lid on and shake hard for 10 seconds so the honey dissolves before any oil goes in.
  3. 3Add the olive oil, salt and pepper.
  4. 4Shake again for 30 seconds until thick, pale gold and completely combined.
  5. 5Taste and add another teaspoon of honey if your mustard is a fierce one.
  6. 6Keeps in the fridge for up to 2 weeks. Shake again before each use.
