Fajita Chicken and Potato Tray Bake

All the smoky, lime-spiked flavour of fajitas with roast potatoes doing the job of the tortillas. It roasts in one go with almost no stirring.
Ingredients
- 700 gram chicken breast fillets
- 800 gram baby potatoes
- 1 piece red capsicum
- 1 piece green capsicum
- 1 piece red onion
- 2 teaspoon ground cumin
- 2 teaspoon smoked paprika
- 3 tablespoon olive oil
- 1 piece lime
- 1/2 bunch coriander
Instructions
- 1Heat the oven to 210°C and halve the baby potatoes.
- 2Toss the potatoes with 2 tablespoons of oil and a pinch of salt on a large oven tray, cut side down.
- 3Roast the potatoes alone for 18 minutes, until the cut faces are golden.
- 4Slice the chicken into thick strips and toss with the capsicum strips, onion wedges, cumin, paprika and remaining oil.
- 5Spread the chicken mixture over the potatoes in a single layer.
- 6Roast for 22 minutes, until the chicken strips are white all the way through and the capsicum edges are charred.
- 7Squeeze the lime over the tray and scatter with torn coriander.
