Haloumi, Potato and Zucchini Tray Bake

Squeaky haloumi turns golden on top of herby potatoes and zucchini, with honey and lemon poured over the hot tray. A vegetarian dinner that fills everyone up.
Ingredients
- 400 gram haloumi
- 800 gram baby potatoes
- 2 piece zucchini
- 250 gram cherry tomatoes
- 2 teaspoon dried oregano
- 3 tablespoon olive oil
- 1 tablespoon honey
- 1 piece lemon
- 60 gram rocket
Instructions
- 1Heat the oven to 210°C and halve the baby potatoes.
- 2Toss the potatoes on a large oven tray with 2 tablespoons of oil, the oregano and a pinch of salt.
- 3Roast the potatoes alone for 22 minutes, until golden underneath.
- 4Add thick zucchini slices and the tomatoes and toss through the potatoes.
- 5Lay 1cm slices of haloumi over the top and brush with the remaining oil.
- 6Roast for 18 minutes, until the haloumi is deep gold and the tomatoes have split.
- 7Drizzle with honey, squeeze over the lemon and top with rocket.
