Smoky Paprika Chicken Skewers

Chicken thigh chunks soaked in smoked paprika, garlic and lemon, then charred on the grill bars until the edges catch. Needs 1 hour marinating.
Ingredients
- 700 gram chicken thigh fillets
- 2 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 3 clove garlic
- 2 tablespoon olive oil
- 1 piece lemon
- 1 teaspoon sea salt
Instructions
- 1Cut the chicken thighs into 3 cm chunks and drop them into a large bowl.
- 2Crush the garlic and add it with the smoked paprika, cumin, olive oil, salt and the juice of the lemon.
- 3Toss until every piece is coated, cover, and refrigerate for 1 hour.
- 4Thread the chicken onto 8 skewers, leaving a small gap between each piece.
- 5Heat the barbecue grill bars to medium-high for 5 minutes and oil them lightly.
- 6Grill the skewers for 12 minutes, turning every 3 minutes, until charred in patches.
- 7Cut into the thickest chunk to check the meat is white right through with clear juices, or 75°C on a thermometer.
