Sweet Potato and Feta Brunch Hash

Crispy sweet potato, wilted spinach and fried eggs in one pan, finished with salty feta. Hearty enough to carry you to dinner.
Ingredients
- 400 gram sweet potato
- 2 tablespoon olive oil
- 1/2 piece red onion
- 2 cup baby spinach
- 2 piece eggs
- 50 gram feta
- 1/2 teaspoon smoked paprika
Instructions
- 1Peel the sweet potato and cut it into 1 centimetre cubes; slice the onion.
- 2Heat the oil in a large frying pan over medium heat.
- 3Cook the sweet potato and onion, stirring now and then, for 12 to 14 minutes until tender and browned.
- 4Stir in the paprika and spinach and cook until the spinach wilts.
- 5Make two gaps in the hash and crack an egg into each.
- 6Cover and cook for 3 to 4 minutes until the whites are set.
- 7Crumble the feta over the top and serve from the pan.
