Maple Mustard Sausages With Root Vegetables

Sausages, carrots, parsnip and potato roast in a sweet mustard glaze until everything is sticky at the edges. A proper cold-night dinner with one tray to wash.
Ingredients
- 8 piece beef sausages
- 700 gram chat potatoes
- 3 piece carrots
- 2 piece parsnips
- 1 piece red onion
- 2 tablespoon wholegrain mustard
- 2 tablespoon maple syrup
- 2 tablespoon olive oil
- 1 tablespoon fresh thyme
Instructions
- 1Heat the oven to 200°C and cut the potatoes, carrots and parsnips into similar 3cm pieces.
- 2Toss the vegetables and onion wedges on a large oven tray with the oil, thyme and a good pinch of salt.
- 3Roast the vegetables alone for 20 minutes, until they look dry and lightly coloured.
- 4Stir the mustard and maple syrup together in a mug.
- 5Lay the sausages on the tray and brush half the glaze over everything.
- 6Roast for 25 minutes, turning the sausages once, until they are deep brown and the vegetables are tender when pierced.
- 7Spoon the remaining glaze over the hot tray before serving.
