Golden Curry Powder Blend

A warm, fragrant curry powder made from supermarket spices and kept in a jar on the shelf. Far livelier than a shop-bought tin and ready whenever a curry calls.
Ingredients
- 4 tablespoon ground coriander
- 3 tablespoon ground cumin
- 2 tablespoon ground turmeric
- 1 tablespoon mustard powder
- 2 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon mild chilli powder
- 1 teaspoon ground black pepper
Instructions
- 1Spoon the coriander, cumin and turmeric into a bowl.
- 2Add the mustard powder, ginger, cinnamon, chilli powder and black pepper.
- 3Whisk until the blend is a uniform deep yellow with no clumps.
- 4Transfer to a 300 millilitre jar and label it with the date.
- 5TO USE: fry 1 chopped onion in 2 tablespoons oil, add 2 tablespoons of blend and cook for 1 minute until fragrant, then add your meat or vegetables, a 400 g tin of tomatoes and 200 ml coconut milk. Simmer 20 minutes. Serves 4.
- 6Store in an airtight jar in a cool dark cupboard for up to 9 months.
