Baked Blueberry Oat Slice

A soft, cake-like baked oatmeal you slice into squares. Lovely warm with yoghurt, and just as good cold from the fridge.

Ingredients

  • 2 1/2 cup rolled oats
  • 375 millilitre milk
  • 2 piece eggs
  • 80 millilitre honey
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 1/2 cup frozen blueberries
  • 40 gram butter

Instructions

  1. 1Preheat the oven to 180°C and grease a 20 centimetre square baking dish.
  2. 2Whisk the eggs, milk, melted butter and honey in a large bowl.
  3. 3Stir in the oats, baking powder and cinnamon.
  4. 4Fold through one cup of the blueberries.
  5. 5Pour into the dish and scatter the remaining blueberries on top.
  6. 6Bake for 35 minutes until set and golden at the edges.
  7. 7Cool for 10 minutes, then cut into squares.
