Anzac Biscuit Mix In A Jar

Oats, coconut and brown sugar layered in a jar, ready to become chewy Anzac biscuits with butter and golden syrup. A lovely thing to keep on hand or give away.
Ingredients
- 150 gram rolled oats
- 150 gram plain flour
- 80 gram desiccated coconut
- 150 gram brown sugar
- 50 gram caster sugar
Instructions
- 1Spoon the plain flour into the base of a 1 litre jar and press it flat.
- 2Layer in the desiccated coconut, then the brown sugar, pressing each layer down firmly.
- 3Add the caster sugar, then top with the rolled oats and seal the jar.
- 4Tie on a label with the date and the to-use directions below.
- 5TO USE: tip the jar into a bowl and stir. Melt 125 g butter with 2 tablespoons golden syrup, dissolve 1 1/2 teaspoons bicarbonate of soda in 2 tablespoons boiling water, add both to the dry mix and stir. Roll tablespoons of dough, flatten and bake at 160°C for 15 minutes. Makes 24.
- 6Store in an airtight jar in a cool dark cupboard for up to 3 months.
