Anzac Biscuit Mix In A Jar

Oats, coconut and brown sugar layered in a jar, ready to become chewy Anzac biscuits with butter and golden syrup. A lovely thing to keep on hand or give away.

Ingredients

  • 150 gram rolled oats
  • 150 gram plain flour
  • 80 gram desiccated coconut
  • 150 gram brown sugar
  • 50 gram caster sugar

Instructions

  1. 1Spoon the plain flour into the base of a 1 litre jar and press it flat.
  2. 2Layer in the desiccated coconut, then the brown sugar, pressing each layer down firmly.
  3. 3Add the caster sugar, then top with the rolled oats and seal the jar.
  4. 4Tie on a label with the date and the to-use directions below.
  5. 5TO USE: tip the jar into a bowl and stir. Melt 125 g butter with 2 tablespoons golden syrup, dissolve 1 1/2 teaspoons bicarbonate of soda in 2 tablespoons boiling water, add both to the dry mix and stir. Roll tablespoons of dough, flatten and bake at 160°C for 15 minutes. Makes 24.
  6. 6Store in an airtight jar in a cool dark cupboard for up to 3 months.
