Big-Batch Savoury Mince

The ultimate flexible freezer staple: seasoned beef mince with vegetables that becomes jaffles, pies, pasta or loaded spuds in minutes.
Ingredients
- 1 kilogram beef mince
- 1 tablespoon olive oil
- 2 piece brown onion, diced
- 2 piece carrot, diced
- 2 piece celery stalk, diced
- 3 clove garlic, crushed
- 2 tablespoon tomato paste
- 500 millilitre beef stock
- 2 tablespoon worcestershire sauce
- 1 cup frozen peas
- 2 tablespoon gravy powder
Instructions
- 1Heat the oil in a large pot over medium heat and cook the onion, carrot and celery for 7 minutes until soft.
- 2Add the garlic and stir for 1 minute.
- 3Turn the heat to high, add the mince and cook for 6 minutes, breaking it up, until browned all over.
- 4Stir in the tomato paste, stock and worcestershire sauce and bring to a simmer.
- 5Simmer uncovered for 20 minutes, stirring occasionally.
- 6Mix the gravy powder with 2 tablespoons of cold water, stir it in with the peas and simmer for 5 minutes until glossy and thick.
- 7Season to taste. Cool, then freeze flat in zip-lock bags for up to 3 months; thaw overnight and reheat in a saucepan until steaming hot.
