Capsicum and Feta Frittata

A fluffy oven-finished frittata with sweet capsicum, spring onion and salty feta. Serve with a handful of rocket and dinner is done.
Ingredients
- 8 piece eggs
- 1 piece red capsicum
- 4 piece spring onion
- 100 gram feta
- 1/4 cup milk
- 1 cup frozen peas
- 1 tablespoon olive oil
- 60 gram rocket
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- 1Preheat the oven to 180°C.
- 2Dice the capsicum and slice the spring onions.
- 3Whisk the eggs, milk, salt and pepper in a large jug or bowl.
- 4Heat the oil in a 24 cm ovenproof frying pan over medium heat. Cook the capsicum and spring onion for 4 minutes until soft.
- 5Scatter in the frozen peas, pour over the egg mixture and crumble the feta on top.
- 6Cook on the stovetop for 3 minutes without stirring, so the base sets.
- 7Move the pan to the oven and bake for 12 minutes, until the centre is set and no longer wobbly.
- 8Cut into wedges and serve with rocket on the side.
