Char-Grilled Capsicum and Zucchini Platter

Thick strips of capsicum and zucchini grilled until soft and smoky, then dressed while warm with balsamic and torn basil. Just as good at room temperature.
Ingredients
- 3 piece red capsicum
- 3 piece zucchini
- 1 piece red onion
- 3 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1/2 bunch basil
- 1 teaspoon sea salt
Instructions
- 1Cut the capsicums into wide flat strips and discard the seeds and white ribs.
- 2Slice the zucchini lengthways into 1 cm planks and cut the red onion into thick rounds.
- 3Brush all the vegetables with 2 tablespoons of the olive oil and season with salt.
- 4Heat the barbecue grill bars to medium-high for 5 minutes.
- 5Grill the vegetables for 6 minutes on one side, until stripes of char appear.
- 6Turn and grill for 6 minutes more, until the zucchini bends and the capsicum skin blisters.
- 7Arrange on a platter, drizzle with the remaining oil and the balsamic, and tear over the basil.
