Sausage, Potato and Cabbage Fry-Up

Sausages, potatoes and shredded cabbage all cook down in one pan into something buttery and savoury. Cheap, filling and barely any chopping.

Ingredients

  • 6 piece pork sausages
  • 700 gram chat potatoes
  • 1/2 piece savoy cabbage
  • 1 piece brown onion
  • 1 tablespoon wholegrain mustard
  • 2 tablespoon olive oil
  • 150 millilitre chicken stock
  • 1/2 bunch flat-leaf parsley

Instructions

  1. 1Cut the potatoes into 2cm cubes and squeeze the sausage meat out of its skins into rough lumps.
  2. 2Heat the oil in a large frying pan over medium-high heat and fry the sausage lumps for 6 minutes, until browned.
  3. 3Add the potatoes and sliced onion and fry for 8 minutes, stirring twice, until the potato edges colour.
  4. 4Pour in the stock, cover and cook over low heat for 10 minutes, until the potatoes are tender.
  5. 5Pile the shredded cabbage on top, cover again and cook for 6 minutes, until it has wilted right down.
  6. 6Stir the mustard through and scatter with parsley.
