Sausage, Potato and Cabbage Fry-Up

Sausages, potatoes and shredded cabbage all cook down in one pan into something buttery and savoury. Cheap, filling and barely any chopping.
Ingredients
- 6 piece pork sausages
- 700 gram chat potatoes
- 1/2 piece savoy cabbage
- 1 piece brown onion
- 1 tablespoon wholegrain mustard
- 2 tablespoon olive oil
- 150 millilitre chicken stock
- 1/2 bunch flat-leaf parsley
Instructions
- 1Cut the potatoes into 2cm cubes and squeeze the sausage meat out of its skins into rough lumps.
- 2Heat the oil in a large frying pan over medium-high heat and fry the sausage lumps for 6 minutes, until browned.
- 3Add the potatoes and sliced onion and fry for 8 minutes, stirring twice, until the potato edges colour.
- 4Pour in the stock, cover and cook over low heat for 10 minutes, until the potatoes are tender.
- 5Pile the shredded cabbage on top, cover again and cook for 6 minutes, until it has wilted right down.
- 6Stir the mustard through and scatter with parsley.
