Yoghurt, Dill and Cucumber Dressing

Cool, light and barely-there creamy — grated cucumber and dill through greek yoghurt. The one to make when a rich dressing would be too much.

Ingredients

  • 250 gram greek yoghurt
  • 1/2 piece lebanese cucumber
  • 2 tablespoon dill
  • 1 clove garlic
  • 1/2 piece lemon
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked black pepper

Instructions

  1. 1Coarsely grate the cucumber onto a clean tea towel.
  2. 2Gather the towel and squeeze hard over the sink — skipping this step is what makes a watery dressing.
  3. 3Finely chop the dill and crush the garlic to a paste with the salt.
  4. 4Stir everything through the yoghurt with the olive oil, 2 teaspoons of lemon juice and the pepper.
  5. 5Loosen with a tablespoon of cold water if you want it pourable rather than spoonable.
  6. 6Keep in a jar in the fridge for up to 3 days.
