Yoghurt, Dill and Cucumber Dressing

Cool, light and barely-there creamy — grated cucumber and dill through greek yoghurt. The one to make when a rich dressing would be too much.
Ingredients
- 250 gram greek yoghurt
- 1/2 piece lebanese cucumber
- 2 tablespoon dill
- 1 clove garlic
- 1/2 piece lemon
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
Instructions
- 1Coarsely grate the cucumber onto a clean tea towel.
- 2Gather the towel and squeeze hard over the sink — skipping this step is what makes a watery dressing.
- 3Finely chop the dill and crush the garlic to a paste with the salt.
- 4Stir everything through the yoghurt with the olive oil, 2 teaspoons of lemon juice and the pepper.
- 5Loosen with a tablespoon of cold water if you want it pourable rather than spoonable.
- 6Keep in a jar in the fridge for up to 3 days.
