Beef San Choy Bau

Savoury beef mince with water chestnuts spooned into cool, crisp lettuce cups. Light, crunchy and surprisingly fast.
Ingredients
- 500 gram beef mince
- 1 piece iceberg lettuce
- 1 tin water chestnuts
- 2 clove garlic
- 2 teaspoon fresh ginger, grated
- 3 piece spring onion
- 2 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
Instructions
- 1Carefully separate 8 large lettuce leaves, rinse them and stand them in a bowl of iced water to crisp up.
- 2Drain and finely chop the water chestnuts. Slice the spring onions, keeping the green tops for serving.
- 3Heat the vegetable oil in a wok over high heat. Cook the garlic, ginger and white parts of the spring onion for 30 seconds.
- 4Add the beef mince. Cook for 5 minutes, breaking it up with a spoon, until browned with no pink left.
- 5Stir in the water chestnuts, oyster sauce, soy sauce and sesame oil. Cook for 2 minutes.
- 6Drain the lettuce leaves and pat dry with a clean tea towel.
- 7Spoon the beef into the lettuce cups, scatter with spring onion tops and serve straight away.
