Beef San Choy Bau

Savoury beef mince with water chestnuts spooned into cool, crisp lettuce cups. Light, crunchy and surprisingly fast.

Ingredients

  • 500 gram beef mince
  • 1 piece iceberg lettuce
  • 1 tin water chestnuts
  • 2 clove garlic
  • 2 teaspoon fresh ginger, grated
  • 3 piece spring onion
  • 2 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil

Instructions

  1. 1Carefully separate 8 large lettuce leaves, rinse them and stand them in a bowl of iced water to crisp up.
  2. 2Drain and finely chop the water chestnuts. Slice the spring onions, keeping the green tops for serving.
  3. 3Heat the vegetable oil in a wok over high heat. Cook the garlic, ginger and white parts of the spring onion for 30 seconds.
  4. 4Add the beef mince. Cook for 5 minutes, breaking it up with a spoon, until browned with no pink left.
  5. 5Stir in the water chestnuts, oyster sauce, soy sauce and sesame oil. Cook for 2 minutes.
  6. 6Drain the lettuce leaves and pat dry with a clean tea towel.
  7. 7Spoon the beef into the lettuce cups, scatter with spring onion tops and serve straight away.
