One-Pot Creamy Salmon And Pea Pasta

Tinned salmon, dry pasta and frozen peas simmer in the same pot until the sauce goes creamy. Twenty minutes from pantry to plate.

Ingredients

  • 350 gram dried spiral pasta
  • 2 tin tinned pink salmon
  • 1 cup frozen peas
  • 900 millilitre chicken stock
  • 200 millilitre light cooking cream
  • 2 teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon cracked black pepper

Instructions

  1. 1Tip the pasta, drained salmon, frozen peas, stock, garlic and pepper into a large saucepan.
  2. 2Put it on high heat until it bubbles, then turn it down to medium and set a timer for 14 minutes, stirring every few minutes.
  3. 3Pour in the cream and lemon juice and stir for 2 minutes until the sauce coats the pasta.
  4. 4Keeps 2 days in the fridge. It is not great frozen once cooked, so reheat chilled portions in the microwave for 2 minutes with a splash of milk stirred through.
