Ham and Cheese Breakfast Muffins

Savoury muffins packed with ham, cheese and corn. Bake a batch on Sunday and breakfast sorts itself all week.
Ingredients
- 2 cup self-raising flour
- 150 gram ham
- 1 cup tasty cheese
- 1 cup corn kernels
- 2 piece eggs
- 250 millilitre milk
- 80 millilitre vegetable oil
- 2 piece spring onions
Instructions
- 1Preheat the oven to 190°C and line a 12-hole muffin tin with paper cases.
- 2Dice the ham and slice the spring onions.
- 3Mix the flour, grated cheese, ham, corn and spring onion in a large bowl.
- 4Whisk the eggs, milk and oil in a jug.
- 5Pour the wet mix into the dry mix and stir until only just combined; lumps are fine.
- 6Divide the batter between the muffin cases.
- 7Bake for 18 to 20 minutes until golden and a skewer comes out clean.
- 8Cool in the tin for 5 minutes, then move to a wire rack.
