Sweet Chilli Barbecued Chicken Wings

Wings marinated in sweet chilli, soy and lime, then cooked over gentle heat until the skin goes glassy and sticky. Needs 2 hours marinating.
Ingredients
- 1.2 kilogram chicken wings
- 125 millilitre sweet chilli sauce
- 2 tablespoon soy sauce
- 1 piece lime
- 3 clove garlic
- 2 piece spring onion
Instructions
- 1Mix the sweet chilli sauce, soy sauce, crushed garlic and the juice of the lime in a large bowl.
- 2Add the wings, turn them through the marinade, cover and refrigerate for 2 hours.
- 3Heat the barbecue to low-medium and oil the grill bars well.
- 4Lift the wings out, letting the marinade drip off, and spread them across the bars.
- 5Cook for 30 minutes, turning every 6 minutes, until the skin is glossy and dark golden.
- 6Cut into a wing at the joint to check the meat pulls away from the bone with no pink and clear juices, or 75°C on a thermometer.
- 7Pile onto a platter and scatter with sliced spring onion.
