Sticky Maple Mustard Pork Ribs

Pork ribs rubbed with smoked paprika, cooked gently with the hood down, then glazed with maple and mustard until lacquered. Needs 4 hours marinating.

Ingredients

  • 1.5 kilogram pork ribs
  • 80 millilitre maple syrup
  • 2 tablespoon dijon mustard
  • 2 tablespoon apple cider vinegar
  • 2 teaspoon smoked paprika
  • 3 clove garlic
  • 2 tablespoon tomato paste

Instructions

  1. 1Whisk the maple syrup, mustard, vinegar, smoked paprika, tomato paste and crushed garlic in a jug.
  2. 2Rub half the mixture all over the ribs, cover and refrigerate for 4 hours. Keep the rest for glazing.
  3. 3Light only one side of the barbecue and bring it to low-medium with the hood closed.
  4. 4Sit the ribs on the unlit side, close the hood, and cook for 45 minutes without turning.
  5. 5Brush the ribs with the reserved glaze and move them over the lit burners.
  6. 6Grill for 10 minutes, turning and glazing every 3 minutes, until the surface is dark and sticky.
  7. 7Check the meat has shrunk back from the bone ends and pulls apart easily, then rest for 5 minutes before cutting into single ribs.
