Sticky Maple Mustard Pork Ribs

Pork ribs rubbed with smoked paprika, cooked gently with the hood down, then glazed with maple and mustard until lacquered. Needs 4 hours marinating.
Ingredients
- 1.5 kilogram pork ribs
- 80 millilitre maple syrup
- 2 tablespoon dijon mustard
- 2 tablespoon apple cider vinegar
- 2 teaspoon smoked paprika
- 3 clove garlic
- 2 tablespoon tomato paste
Instructions
- 1Whisk the maple syrup, mustard, vinegar, smoked paprika, tomato paste and crushed garlic in a jug.
- 2Rub half the mixture all over the ribs, cover and refrigerate for 4 hours. Keep the rest for glazing.
- 3Light only one side of the barbecue and bring it to low-medium with the hood closed.
- 4Sit the ribs on the unlit side, close the hood, and cook for 45 minutes without turning.
- 5Brush the ribs with the reserved glaze and move them over the lit burners.
- 6Grill for 10 minutes, turning and glazing every 3 minutes, until the surface is dark and sticky.
- 7Check the meat has shrunk back from the bone ends and pulls apart easily, then rest for 5 minutes before cutting into single ribs.
