Tuna Mornay Pasta Bake

A budget-friendly Aussie classic: pasta, tinned tuna and corn in a cheesy white sauce with a crunchy golden topping. Doubles easily — split into two dishes and freeze one.

Ingredients

  • 400 gram macaroni
  • 60 gram butter
  • 1/3 cup plain flour
  • 750 millilitre milk
  • 2 cup tasty cheese, grated
  • 2 tin tuna in springwater, drained
  • 1 tin corn kernels, drained
  • 1 cup frozen peas
  • 1 teaspoon dijon mustard
  • 1/2 cup panko breadcrumbs

Instructions

  1. 1Preheat the oven to 180°C. Cook the macaroni in boiling salted water for 2 minutes less than the packet says, then drain.
  2. 2Melt the butter in the same saucepan over medium heat. Stir in the flour and cook for 1 minute.
  3. 3Whisk in the milk in three additions, whisking until smooth each time. Simmer for 3 minutes until the sauce thickens.
  4. 4Take the pan off the heat. Stir in 1 1/2 cups of the cheese and the mustard until melted.
  5. 5Fold in the drained pasta, tuna, corn and peas. Season with salt and pepper.
  6. 6Spoon the mixture into a 20 x 30 cm baking dish. Scatter over the remaining cheese and the panko.
  7. 7Bake for 25 minutes until golden and bubbling at the edges.
  8. 8Rest for 5 minutes, then serve straight from the dish.
