Rosemary Lamb Chops With Potatoes and Broccolini

Potatoes get a head start so they turn crisp, then rosemary lamb chops finish on top in minutes. It looks like a Sunday roast on a weeknight budget of effort.
Ingredients
- 8 piece lamb loin chops
- 900 gram desiree potatoes
- 2 bunch broccolini
- 4 clove garlic
- 2 tablespoon fresh rosemary
- 3 tablespoon olive oil
- 1 piece lemon
- 1 teaspoon salt
Instructions
- 1Heat the oven to 220°C and cut the potatoes into 3cm chunks.
- 2Toss the potatoes on a large oven tray with 2 tablespoons of oil, the crushed garlic, half the rosemary and the salt.
- 3Roast the potatoes alone for 30 minutes, until crisp and golden on the underside.
- 4Rub the chops with the remaining oil and rosemary.
- 5Push the potatoes to one side and add the chops and broccolini to the tray.
- 6Roast for 15 minutes, until the chops are browned and springy when pressed.
- 7Rest for 5 minutes and squeeze the lemon over the tray.
