Coffee and Paprika Rubbed Rump Steak

A dry rub of instant coffee, smoked paprika and brown sugar builds a dark savoury crust on rump steak. Needs 30 minutes for the rub to settle in.
Ingredients
- 800 gram rump steak
- 1 tablespoon instant coffee granules
- 2 teaspoon smoked paprika
- 2 teaspoon brown sugar
- 1 teaspoon garlic powder
- 1 teaspoon cracked black pepper
- 1 teaspoon sea salt
- 1 tablespoon olive oil
Instructions
- 1Crush the coffee granules to a powder in a mortar or with the back of a spoon.
- 2Mix the coffee with the smoked paprika, brown sugar, garlic powder, pepper and salt.
- 3Rub the steaks with the olive oil, then press the spice mix firmly onto both sides.
- 4Leave the steaks on a plate at room temperature for 30 minutes.
- 5Heat the barbecue grill bars to high for 8 minutes.
- 6Grill the steaks for 5 minutes on one side, until a dark crust forms.
- 7Turn once and grill for 5 to 7 minutes more, until a thermometer reads 58°C for medium-rare.
- 8Rest the steaks under foil for 8 minutes, then slice thickly against the grain.
