Coffee and Paprika Rubbed Rump Steak

A dry rub of instant coffee, smoked paprika and brown sugar builds a dark savoury crust on rump steak. Needs 30 minutes for the rub to settle in.

Ingredients

  • 800 gram rump steak
  • 1 tablespoon instant coffee granules
  • 2 teaspoon smoked paprika
  • 2 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon cracked black pepper
  • 1 teaspoon sea salt
  • 1 tablespoon olive oil

Instructions

  1. 1Crush the coffee granules to a powder in a mortar or with the back of a spoon.
  2. 2Mix the coffee with the smoked paprika, brown sugar, garlic powder, pepper and salt.
  3. 3Rub the steaks with the olive oil, then press the spice mix firmly onto both sides.
  4. 4Leave the steaks on a plate at room temperature for 30 minutes.
  5. 5Heat the barbecue grill bars to high for 8 minutes.
  6. 6Grill the steaks for 5 minutes on one side, until a dark crust forms.
  7. 7Turn once and grill for 5 to 7 minutes more, until a thermometer reads 58°C for medium-rare.
  8. 8Rest the steaks under foil for 8 minutes, then slice thickly against the grain.
