Sticky Hoisin Pork Noodles

Pork mince and hokkien noodles tossed in a sticky hoisin sauce with plenty of veg. One wok, fifteen minutes of cooking, zero fuss.
Ingredients
- 500 gram pork mince
- 440 gram hokkien noodles
- 1/3 cup hoisin sauce
- 1 tablespoon soy sauce
- 2 clove garlic
- 1 piece carrot
- 1 piece red capsicum
- 3 piece spring onion
- 1 tablespoon vegetable oil
Instructions
- 1Put the noodles in a heatproof bowl, cover with boiling water and leave for 2 minutes. Drain and gently separate.
- 2Cut the carrot into thin matchsticks, slice the capsicum and spring onions, and crush the garlic.
- 3Heat the oil in a wok over high heat. Cook the pork mince for 5 minutes, breaking it up, until browned.
- 4Add the garlic, carrot and capsicum. Stir-fry for 2 minutes.
- 5Add the noodles, hoisin sauce, soy sauce and 2 tablespoons of water. Toss for 2 minutes until everything is coated and hot.
- 6Scatter with spring onion and serve straight from the wok.
