Barbecued Squid with Lemon and Parsley

Squid scored and thrown onto a blazing hotplate for a couple of minutes, then dressed with lemon, garlic and parsley. Quick heat is the whole trick.

Ingredients

  • 600 gram squid tubes
  • 2 tablespoon olive oil
  • 2 clove garlic
  • 2 piece lemon
  • 1/2 bunch flat-leaf parsley
  • 1 pinch chilli flakes
  • 1 teaspoon sea salt

Instructions

  1. 1Slice each squid tube open down one side so it lies flat, then pat it dry.
  2. 2Score the inside surface in a diamond pattern with shallow knife cuts.
  3. 3Toss the squid with 1 tablespoon of the olive oil and the salt.
  4. 4Heat the barbecue hotplate to high for 8 minutes so it is fiercely hot.
  5. 5Lay the squid scored side down and cook for 90 seconds, until it curls and turns white.
  6. 6Flip and cook for 60 seconds more, then take it straight off so it does not toughen.
  7. 7Toss the hot squid with the remaining oil, crushed garlic, chopped parsley, chilli flakes and the juice of both lemons.
