Barbecued Squid with Lemon and Parsley

Squid scored and thrown onto a blazing hotplate for a couple of minutes, then dressed with lemon, garlic and parsley. Quick heat is the whole trick.
Ingredients
- 600 gram squid tubes
- 2 tablespoon olive oil
- 2 clove garlic
- 2 piece lemon
- 1/2 bunch flat-leaf parsley
- 1 pinch chilli flakes
- 1 teaspoon sea salt
Instructions
- 1Slice each squid tube open down one side so it lies flat, then pat it dry.
- 2Score the inside surface in a diamond pattern with shallow knife cuts.
- 3Toss the squid with 1 tablespoon of the olive oil and the salt.
- 4Heat the barbecue hotplate to high for 8 minutes so it is fiercely hot.
- 5Lay the squid scored side down and cook for 90 seconds, until it curls and turns white.
- 6Flip and cook for 60 seconds more, then take it straight off so it does not toughen.
- 7Toss the hot squid with the remaining oil, crushed garlic, chopped parsley, chilli flakes and the juice of both lemons.
