Hotplate Lamb Kofta Skewers

Cumin and coriander lamb mince pressed around skewers and browned on the hotplate until crusty outside and juicy in the middle. Needs 30 minutes chilling.
Ingredients
- 600 gram lamb mince
- 1 piece brown onion
- 3 clove garlic
- 2 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 bunch flat-leaf parsley
- 1 piece egg
- 1 teaspoon sea salt
Instructions
- 1Grate the onion coarsely and squeeze out the excess liquid with your hands.
- 2Mix the lamb mince, onion, crushed garlic, cumin, coriander, chopped parsley, egg and salt in a large bowl for 2 minutes until sticky.
- 3Shape the mixture into 8 sausages around flat metal skewers, pressing firmly so they hold.
- 4Sit the skewers on a tray and chill in the fridge for 30 minutes so they firm up.
- 5Heat the barbecue hotplate to medium and oil it lightly.
- 6Cook the koftas for 12 minutes, rolling them a quarter turn every 3 minutes, until browned on all four sides.
- 7Cut one open to check the centre is grey-brown with no pink mince left.
