Sausage and Veggie Couscous

Browned pork sausages with zucchini and capsicum over fluffy five-minute couscous. A relaxed pan dinner with barely any washing up.
Ingredients
- 8 piece thick pork sausages
- 1 1/2 cup couscous
- 375 millilitre chicken stock
- 2 piece zucchini
- 1 piece red capsicum
- 1 piece red onion
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
- 1 piece lemon
Instructions
- 1Slice the zucchini into rounds, and cut the capsicum and onion into chunks.
- 2Heat the oil in a large frying pan over medium heat. Cook the sausages for 10 minutes, turning every few minutes, until browned and cooked through. Move to a plate.
- 3While the sausages cook, bring the stock to the boil, pour it over the couscous in a heatproof bowl, cover and leave for 5 minutes.
- 4Add the zucchini, capsicum, onion and paprika to the frying pan. Cook for 6 minutes, stirring often, until the veg is tender and browned at the edges.
- 5Fluff the couscous with a fork and squeeze over half the lemon.
- 6Slice the sausages thickly and return them to the pan with the veg for 1 minute to warm.
- 7Serve the sausages and veg over the couscous with the remaining lemon in wedges.
